Bize-Size Stilton & Bacon Cheesecakes

  • 1.5 cups crushed bagel chips
  • 3 oz butter, melted
  • 1 egg white
  • 24 oz cream cheese, room temperature
  • 3 T. cornstarch
  • 1 t. salt
  • 4 oz. sour cream
  • 2 large eggs, beaten
  • 6 oz stilton cheese, crumbled
  • 1/2 c. cooked, chopped bacon



Step 1

In a mixing bowl, combine bagel chips with butter and egg white. Press tablespoons of mixture into a prayed mini muffin tin and bake at 350 degrees for 8 minutes, or until crisp.

In a mixer, beat cream cheese with corn starch, salt, sour cream and eggs until smooth.

Fold in Stilton cheese and bacon and spoon 2 T of mixture into each muffin tin.

Reduce heat to 325 degrees and bake cheesecakes for 25 - 30 minutes, or until golden on top and firm to the touch. Let cakes cool in pan for 10 minutes before turning out.
