Goats Cheese and Tuna Bruschetta

  • 6 slices of sourdough
  • 250 g goats cheese
  • 2 x 100g cans of John West Tuna (alternative to recipe would be tuna with chilli and sliced smoked salmon)
  • 1 Tbs olive oil
  • 3 tsp balsamic vinegar
  • 1 cup rocket leaves
  • 1/2 roasted capsicum, sliced
  • sliced cucumber and tomato
  • black olives


Preparation time 10mins


Step 1

Place bread onto a baking sheet. Bake at 220 degrees for 10 minutes until crisp. Spread each slice with goats cheese and tuna. Place olive oil and balsamic vinegar into bowl. Whisk to combine. Add rocket leaves, red capsicum, cucumber, tomato and toss gently. Top bruschetta with salad and olives and serve.
