Twice a Year Pork Chops

Ingredients
- 4 pork chops -- boneless or bone-in, 3/4 inch thick
- bacon grease
- 2 yellow onions
- 1 cup heavy cream
- salt and pepper

Step 1
1. Heat 3 tablespoons bacon grease in a large skillet over medium heat.
Brown chops on both sides.
2. Turn heat down to low. Cover chops with slivered onions. Sprinkle ½
teaspoon salt and a generous grinding of pepper on the onions. Cover
tightly with lid. Cook 30-40 minutes.
3. Remove chops from pan to serving dish and cover with foil to keep
warm. Add cream to the pan with the onions and cook on medium low heat
about 7 minutes. Add salt and pepper to taste.
4. Pour over the pork chops and serve at once.
