Cinnamon Apple Muffin Pies

Ingredients
- 4 slices white or wheat bread, crusts removed
- 1/4 stick butter
- 1/4 cup brown sugar
- 1/4 teaspoon cinnamon
- 1 large Granny Smith apple, peeled and cored
- 1/4 lemon

Step 1
1. Preheat oven to 350. With a rolling pin, roll out each piece of bread as flat as possible. Set aside.
2. Melt the butter in a glass dish in the microwave for 10 seconds. Set aside.
3. In a small bowl, whisk together the brown sugar and cinnamon. Cut the apple into bite size pieces. Pieces about 2-3 inches will be perfect. Put the apple pieces in a bowl and squeeze the lemon quarter over them and toss with a spoon.
4. Brush melted butter into four muffin tins, making sure to go up the sides. Very gently press each piece of bread into the buttered muffin molds (there will be extra bread sticking up on each side).
5. Pour the brown sugar-cinnamon mixture over the apples and toss to coat. Add the melted butter and toss again. Divide the apple pieces among the four muffin crusts. Slide into the oven and bake for 20 minutes.
Eat warm or cold.
