Asia-Style Broiled Tilapia

Ingredients
- 1/4 c. soy sauce
- 2 tbls sugar
- 3 lg cloves garlic, @ 1 tlbs minced
- Juice of 1 lime (2 tbls or so)
- 1 tsp (or so) minced or grated fresh ginger
- 1/4 tsp crushed red pepper, or 1/2 minced Serrano chili
- 1 lb tilapia fillets (or other thin, mild fish)

Preparation
Step 1
Combine soy sauce, sugar, garlic, lime juice, ginger and red pepper in wide, shallow baking pan that will hold fish in single layer. Stir briefly to dissolve sugar. Add tilapia, then turn it over so that it's coated all over with marinade and set aside for 20 min or so.
Heat broiler to high and move oven rack to position closest to heat.
Slide the pan into the oven and broil the fish 5 min. Keep the oven door ajar so the broiler element stays lit. Turn the pan around (back to front) and broil 5 min more. If the juices in the pan appear to burn, add a little water to the dry spot to prevent burning.
Fish should be opaque and flaky. Serve with butternut squash and rice mixed with greens or peas. Spoon pan sauce over rice and/or fish.
