Ingredients
- 2 tablespoons water
- 2 teaspoons cornstarch
- 1 tablespoon peanut or vegetable oil
- 1 small bunch scallions, chopped (about
- 1 cup)
- 1 thumb-size piece fresh ginger, peeled
- and minced
- 4 cups trimmed snow peas or sugar snap
- peas (about 3/4 pound)
- 1 cup shredded cooked skinless, boneless
- chicken breast
- 3/4 cup reduced-sodium chicken broth
- 1 (8-ounce) can sliced water chestnuts,
- drained and rinsed

Preparation
Step 1
STIR the water and cornstarch together in a small bowl until smooth; set aside.
HEAT the oil in a large nonstick skillet over medium high heat; add the scallions and ginger. Stir-fry until the scallions are wilted, about 2 minutes; stir in the snow peas. Continue cooking and stirring until the peas are bright green, adding 1
tablespoon of water if the mixture becomes dry.
STIR in the chicken, broth, and water chestnuts; cook, stirring gently, until the snow peas are tender-crisp, 2 minutes. Stir in the cornstarch mixture and cook 1 minute more, stirring constantly, until sauce thickens slightly. Serve at once.
