Pressure Cooker Two Can Cola Pork Roast

This is from Bob Warden's Great Food Fast Cookbook. Very simple but very good! I didn't want to prepare a side vegetable so I added baby carrots to the recipe.
Ingredients
- 1 tablespoon vegetable oil
- 1 - 3 to 4 pound pork loin roast
- 1/4 teaspoon pepper
- 2 cans regular cola
- 1 packet powdered onion soup mix
- 2 pounds baby carrots (optional)
- 1 tablespoon cornstarch mixed into 2 tablespoons water (optional)
- 3 tablespoons butter (optional)

Step 1
With cookers lid off, heat oil on High or Brown setting until sizzling, Season meat with pepper, place in cooker and brown on each side.
Add cola, carrots and onion soup mix, secure lid and cook on HIGH for 60 to 70 minutes.
Let pressure release naturally, remove roast and cover with aluminum foil.
If desired, strain off 1 cup liquid and discard. Set cooker to High or Brown, with lid off and whisk cornstarch and water into remaining liquid. Let simmer 2 minutes to thicken, then add in butter and stir. Serve meat smothered in the gravy.
