Ingredients

  • Crust:
  • 2 Cups baking mix*
  • 1/4 Cup sugar
  • 2/3 Cup milk
  • 2 TB. vegetable oil
  • 1 egg
  • Filling:
  • 1 8-oz. pkg. cream cheese, softened
  • 1/4 Cup sugar
  • 1 egg
  • 1/2 tsp. PURE VANILLA EXTRACT
  • Topping:
  • 2 1/2 Cups 1/4-inch thick apple slices (peel if desired), about 4 apples
  • 2 tsp. sugar (VANILLA SUGAR would be nice)
  • 1/2 tsp. GROUND NUTMEG
  • 1/4 tsp. PENZEYS CINNAMON
  • 1/4 tsp. KOSHER-STYLE FLAKE SALT
  • Homemade Baking Mix:
  • 2 Cups flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 2 TB. shortening or butter

Step 1

Preheat oven to 350°. Combine the crust ingredients and beat well. Pour into a greased and floured 9x13 baking dish and set aside. Combine filling ingredients and beat until smooth and well blended. Spread the cream cheese mixture gently and evenly over the crust batter. This takes a bit of time and is easiest if you drop blobs of batter randomly over the cake, then smooth out. Overlap the apple slices horizontally in rows on top of the filling mixture. Combine the topping ingredients and sprinkle over the apples. Bake at 350° for 35-40 minutes.

*Homemade Baking Mix: Combine all of the ingredients. Place in a blender or food processor and pulse until the mixture resembles fine crumbs.
