This easy Spanish tapas is great finger food for a party.Start to soak the sail cod or salt fish several days ahead if you can,and change the water a couple of times to ensure that the fish is not too salty.This goes well with the Smoked Tomato Sauce(Prosciutto-Wrapped Monkfish)

Ingredients

  • 2 lb(1 Kg) salt fish,soaked overnight
  • 1 tbsp shallots,finely diced
  • 2 cups mashed potatoes
  • 1 egg,beaten+3 eggs,lightly beaten
  • 1 cup flour
  • 1 cup bread crumbs
  • countertop fryer 350 F

Preparation

Step 1

Simmer the fish and shallots together in lots of water over medium heat until the fish is flaky (about 15 min).
Strain and cool.Break apartand flake the fish.
Mix the fish with the mashed potato and the first beaten egg.Chill for 1 hour.Form the mixture into croquettes small cylinders around 1 cm wide and 3 cm long.Roll each croquette in flour,dip it into the remaining eggs,and then roll it in the bread crumbs.Chill again for 1 hour.
Preheat a fryer to 350 F and fry the croquettes until golden brown,about 4 min.Drain on paper towel before serving.Serve with Smoked Tomato Sauce.
