Grilled or Broiled Pork Chops with Mustard Herb Sauce

Ingredients
- 1/2 cup flat-leaf parsley
- 1-1/2 Tbsp chopped fresh thyme
- 2 Tbsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 4 boneless pork chops, 3/4" thick
- 2 Tbsp lemon juice

Preparation
Step 1
Heat grill or broiler. Puree 1/4 cup of the parsley and 1 Tbsp of the thyme with 1 Tbsp of the mustard and the salt and pepper in a blender or food processor. Coat the pork with this mixture and let it marinade while the grill or broiler is heating, at least 10 minutes.
Grill or broil the pork until cooked through, 6 to 8 minutes, turning once.
While pork cooks, make sauce. Mince the remaining 1/4 parsley and 1/2 Tbsp thyme and mix with the remaining 1 Tbsp mustard and lemon juice.
