Ingredients

  • 1 C raisins
  • 2 C corn meal
  • 3 C buttermilk
  • 1 TSP vanilla
  • 2 2/3 C flour
  • 2 TSP baking powder
  • 1 TSP salt
  • 2 TSP baking soda
  • 1 TBSP grated orange rind
  • 2 eggs
  • 1 C vegetable oil
  • 1 C sugar

Preparation

Step 1

Combine corn meal and 2 cups buttermilk and set aside for 10 minutes. Scald raisins with boiling water and drain. In a large mixing bowl combine flour, baking powder, salt baking soda, and orange zest. Beat together eggs, oil, sugar and remaining buttermilk. Add this to cornmeal buttermilk mix then add wet ingredients to the dry ingredients. Add drained raisins and mix well. Bake in lined muffing tins at 400 for 20 minutes.
