  • 1 9" deep dish pie shell
  • 1/3 cup sugar
  • 2 1/2 pounds sliced peaches
  • 1/4 tsp. salt
  • 1 egg
  • 1/2 tsp. ground nutmeg
  • 1 egg yolk
  • 1/4 tsp. ground cinnamon
  • 3/4 cup whipping cream
  • 1/2 tsp. pure almond extract
  • 2 Tbl. all-purpose flour
  • 1 Tbl. cornstarch

Step 1

Preheat oven to 375 degrees.

1. Place sliced peaches in large mixing bowl and set aside. If using canned peaches, make sure you DRAIN peaches VERY WELL.
2. In a 2 cup measuring cup, mix the eggs, almond and whipping cream together. Set aside.
3. In medium bowl, combine all dry ingredients. Then mix in wet ingredients, combine well.
4. First, spoon peaches into unbaked pie shell. You can arrange or just pour into to pie shell.Then, pour mixture over peaches. Fill to rim of pie shell. Be careful not to overfill. There may be some excess mixture.
5. Bake for 20 minutes. Then turn the oven temperature down to 350 degrees and bake for an additional 25 minutes or until the crust is golden brown. Cool and refrigerate until ready to serve.
