Rum Cake

  • Cake:
  • 1 c chopped nuts (walnuts or pecans)
  • 1 (18.25oz) Golden Yellow cake mix
  • 1 (3 3/4 oz) pkg. vanilla instant pudding mix
  • 4 eggs
  • 1/2 Bacardi rum
  • 1/2 c water
  • 1/2 c oil
  • Glaze:
  • When cake has only a few minutes remaining make glaze.  Melt in a small pot:
  • 1 stick butter
  • Add:
  • 1 c sugar
  • 1/4 c water



Step 1

Bring to a slow boil and stir constantly for 5 minutes.  Remove from heat and add:
¼ c Bacardi rum
Grease and flower a 10in. tube pan. 
Sprinkle nuts over the bottom. 
Mix remaining cake ingredients and pour over nuts.
Bake at 325 for 1 hour. 
Remove from oven and set pan on a wire rack. 
Prick all over top with a fork, or make small slits with a sharp knife. 
Pour glaze over cake still in pan and allow to soak in. 
When cake cools, remove from pan and serve!
