Tom's Tuscan Penne Shrimp

Ingredients

  • 12 oz.Penne Pasta,
  • 4 slices bacon or pancetta(chopped)
  • 16 oz.Heavy Whipping Cream,
  • 2 tbsp. Butter,
  • 1/2 cup Parmesan Cheese,
  • 1 tbsp. minced garlic,
  • 1 cup of mushrooms,
  • 1 1/2 lbs. shrimp,
  • salt & pepper.
  • Parsley flakes to garnish

Preparation

Step 1

Cook Pasta as directed.
In a large skillet cook bacon, remove and set aside.
Add mushrooms and garlic for 1 minute, add shrimp let simmer for 2–3 more minutes or until shrimp are opaque.
Add cream, butter, and half of Parmesan cheese
Add salt & pepper as desired.
Serve with rest of Parmesan cheese and Parsley over top.
