Ingredients

  • Icing/Filling:
  • 2 cups sugar
  • 1 cup oil
  • 4 eggs
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 3 cups grated carrots
  • 1 stick butter
  • 1 box 10x sugar
  • 1 8oz. cream cheese
  • 1 tsp. vanilla
  • 1 cup chopped nuts (optional)

Preparation

Step 1

Pre-heat oven to 350 degrees. Grease & flour 9x13 pan.

1. Beat sugar, oil, eggs and vanilla well until light and creamy.

2. Mix dry ingredients.

3. Add flour mixture to sugar mixture. Mix well. Fold in carrots.

4. Bake for approx. 40 minutes.


Icing:
Mix all ingredients together until light and fluffy.
