Tangy Caramel Bananas

Ingredients
- 1 small lime Fresh pineapple instead of bananas
- 1 3/4 oz. butter
- 1/2 cup soft brown sugar
- 1/2 cup light cream
- 4 small bananas

Preparation
Step 1
Finely grate the zest of the lime, then squeeze the juice. Melt the butter in a large frying pan over medium heat. Add the sugar, lime zest and lime juice and stir until the sugar has dissolved.
Pour the cream and stir until evenly combined. Cook over medium-low heat for 2 minutes, or until thickened slightly.
Peel the bananas and cut them diagonally into thick slices. Add the slices to the pan and gently turn to coat in the sauce. Allow to cool slightly before serving.
Suggestion:
Sprinkle with chopped roasted, unsalted peanuts and serve with vanilla ice cream.
