Ingredients
- 2 tbsp. balsamic vinegar
- 1 tbsp. liquid honey
- 1/4 tsp. dried leaf tarragon
- pinches of salt and black pepper
- 1/4 c. vegetable oil
- 1 large bunch fresh spinach, trimmed and cleaned
- 1/4 lb. (125g) mushrooms
- 1/4 lb. (125g) swiss or mozzarella cheese
- 1/2 small red onion

Preparation
Step 1
In a small bowl, whisk vinegar with honey, tarragon, salt and pepper. Gradually whisk in oil. Dressing can be covered and refrigerated for up to 1 week.
Tear spinach into large bite size pieces and place in a large bowl. Thinly slice mushrooms and scatter over spinach. Grate cheese and add to salad.
Toss salad with half of dressing. Taste and add more if necessary. Thinly slice onion and scatter over salad.
