PICKLED EGGS AND RED BEETS

Ingredients
- 12 hard cooked eggs, peeled
- 2 cans red beets, drained ( reserve the juice).
- 1/2 cup cider vinegar
- 1/4 cup sugar
- 3/4 cup water
- 2 Tbsp. Pickling Spices

Preparation
Step 1
Place eggs in bowl and top with red beets. Pour the juice of the red beets into a sauce pan.
In a separate bowl, mix the vinegar, sugar and water. Pour mixture into the pan with the red beet juice. Add pickling spices (Note: Pickling spice can be tied in cheese cloth for easy removal, if desired). Note: Some red beets are dark red, others a light red. To make eggs redder, add a few drops of red food coloring. Over a medium-high heat, bring to a boil and pour over the hard cooked eggs and red beets. Let cool, then cover and refrigerate for at least two days so eggs absorbs coloring
