Ingredients
- 1/2 c butter, softened
- 1 c sugar
- 3 lg eggs
- 2 t vanilla extract
- 2 c all purpose flour
- 1/2 c cocoa powder
- 1 t baking soda
- 1/2 t salt
- 1 c pistachios, coarsely chopped
- 1 c dried cherries, coarsely chopped
- 12 oz semisweet chocolate or dark chocolate, melted
- 4 oz white chocolate, melted (optional)

Step 1
Preheat oven to 350. Line 2 baking sheets with parchment paper. Beat butter & sugar at med speed with electric mixer until fluffy. Beat in eggs & vanilla.
Combine flour & next 3 ingredients in lg mixing bowl. Add flour mixture to sugar mixture beating until blended. Stir in pistachios & cherries. Place half of dough on each prepared baking sheet. Shape each half into slightly rounded log about 10x3 in. using floured hands. (Dough will be very sticky.)
Bake 25-30 until dough is firm to touch. Let cool completely on baking sheet on wire rack. Transfer logs to cutting board & cut into 1/2 - 3/4 in wide slices with serrated knife. Place slices cut side down on baking sheet. Bake 4 min each side until crisp. Transfer to wire racks to cool completely.
Dip ends of biscotti in dark chocolate & drizzle with white chocolate if desired. Place on wax paper to set.
