Creamy Cauliflower Salad

  • 1 head cauliflower, cut into florets
  • 1/2 c. grape tomatoes, quartered
  • 3 T. Bacon Bits
  • 1/4 c. shredded cheddar cheese
  • 3 hard-boiled eggs, chopped
  • 1 c. light mayonnaise
  • 1/3 c. Splenda
  • 2 T. Vinegar
  • 1 T. Lemon Juice



Step 1

Toss the first 5 ingredients in a bowl. Dissolve Splenda in bowl with vinegar and lemon juice. Whisk in mayo until thoroughly combined. Pour dressing over salad, toss gently to coat. Cover and refrigerate until well-chilled. Toss again gently, and serve.
