Dijon Green Bean Salad

This old-world-style salad with sauteed onions is great served warm or cold!

Ingredients
- 1 lb green beans, trimmed
- 2 T olive oil
- 1 red onion, thinly sliced, about 1 1/4 cup
- 1 clove garlic, minced
- 1 T apple-cider vinegar
- 1 t Dijon mustard
- 1/2 t salt
- 1/4 t pepper
- 1 c cherry tomatoes, halved

Preparation
Step 1
Over high heat, bring large pot of salted water to boil. Add green beans; cook until just tender, 5 minutes. Drain.
Meanwhile in skillet heat oil over medium heat. Add onion; cook, stirring often, until lighly browned, 3-5 minutes. Add garlic; cook, stirring often, until softened, 1 minute. Stir in vinegar; cook 30 seconds. Remove from heat; whisk in mustard, salt and pepper.
In serving bowl, combine green beans, onion mixture and tomatoes; toss to combine.
