Lemon Fluff Jello

Ingredients
- 3 small (3 ounce) packages of lemon jello
- 2 cups water
- 1 large can crushed pineapple
- 2 cups cold water
- 1 small (2 cup) container cool whip
- 1 can (enough to make 8-inch pie) lemon pie filling (If unable to find lemon pie filling in a can, use 3.4 ounce package of lemon pie and pudding. Follow directions for mixing and add to Jell-O mixture at proper time)

Preparation
Step 1
Drain can of crushed pineapple and save the liquid
Boil 2 cups water in a small saucepan
Empty Jell-O into boiling water in pan until dissolved. When dissolved, combine pineapple juice with cold water and add to Jell-O mix.
Refrigerate until partially set (about 45 minutes)
Put mixture into a bowl and whip with a whisk or electric mixer
Add cool whip
Fold in lemon pie filling
Fold in drained, crushed pineapple and blend thoroughly
Pour into a bowl and chill at least 12 hours before serving.
