Ingredients

  • 3 Tbsp Olive Oil
  • 3 Medium Zucchini cut into 1/2" Slices
  • 2 Large Tomatoes peeled and chopped
  • 1 Large Onion chopped
  • 1 Green Pepper Cut into Strips
  • 1/4 Cup Minced Parsley
  • 1 Tbsp minced Fresh Basil (dried - 1 tsp)
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Preparation

Step 1

In large Dutch Oven, saute all ingredients on high for 5 minutes.
Cover, Simmer for 15 minutes or until Vegetables are tender.
