Carrot Cookies

Ingredients

• Cookies:
• 1 1/2 c. shortening
• 1 1/2 c. sugar
• 2 eggs
• 2 c. cooked, mashed carrots
• 1/2 tsp. baking soda
• 1 1/4 tsp. baking powder
• 1/2 tsp. salt
• 2 tsp. vanilla
• 4 c. flour
• Orange Icing:
• 4 tablespoons softened butter
• 1/2 teaspoon vanilla
• 3 cups powdered sugar
• 3 to 4 tablespoons orange juice

Preparation

Step 1

Mix. Bake at 375 degrees 12 minutes. Cool completely. Ice with orange icing.
