Ingredients

  • 3 cups uncooked penne pasta (Cooked al dente)
  • 1 ea red, green or yellow bell peppers (hulled, cut into five large pieces)
  • 6 lg Crimini mushrooms
  • 2 lg Zucchini (halved)
  • 5 Sweet Italian Sausages (halved)
  • 4 Roma tomatoes (halved)
  • 3 tbsp olive oil
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella (1/2 cup reserved)
  • 1/2 cup grated Romano cheese
  • 2 cups tomato sauce
  • 1/4 cup fresh basil
  • 3 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and Pepper to taste
  • Prep Time: 15 minutes
  • Cook Time: 45 minutes
  • Servings: 4-6

Step 1

Preheat oven to 375 degrees. Bring 6 qts of salted water to a boil. Add pasta and cook for 6-8 minutes. Drain and cover with a damp paper towel.

Place the medium blade into the Salad Chef Jr. Chop peppers, mushrooms, zucchini, tomatoes and sausage. Remove chopping lid and add pasta, ricotta, Romano cheese, Mozzarella, tomato sauce and all seasonings, mix
together, taste and adjust seasoning. Pour into an oiled 9x13 nonstick roasting pan. Cover with aluminum foil and bake for 45 minutes. Remove aluminum foil; add remaining mozzarella cheese evenly over the top.

Turn oven to broil and lightly brown the cheese on top. Remove and let stand for 10 minutes. Serve with Garlic Bread and your favorite Red Wine! Happy Cookin’ and Mangia!
