Carrot Peanut Butter Pupcakes

  • 1 cup Whole Wheat Flour
  • 1 tsp. baking soda
  • 1/2 c. peanut butter
  • 1/4 c. vegetable oil
  • 1 cup shredded carrots
  • 1 tsp. vanilla
  • 1/3 honey (optional)
  • 1 egg



Step 1

Preheat oven to 350 degrees
Put carrots, vanilla, vegetable oil, peanut butter, egg and honey if you are using into blender. Puree until carrots are smooth. In bowl, mix together flour and baking soda. Add pureed mixture to flour mixture and stir. Bake in cupcake tins for 25 minutes.

Optional frosting: 1/2 cup cream cheese and 1/2 cup peanut butter. Whipped. Decorate with Dog bone treat if desired.
