Ingredients
- Mayo:
- 1 lb shrimp, cooked and cut into bite sized pieces
- croissants
- tomatoes
- lettuce
- avocado slices
- 1/3 cup mayo
- 2 T. capers, finely chopped
- 1 1/2 T. onion, grated
- 1 T. fresh tarragon, chopped
- 1/4 tsp. celery seed
- 1/4 tsp. Tabasco
- 1/2 c. celery, finely chopped

Preparation
Step 1
Butter croissants and place on hot grill for a couple of minutes. Mix together all ingredients for the mayo. Add a little to toss with shrimp and reserve the rest to spread on croissant. Build croissant with shrimp mixture, tomatoes, lettuce and avocado.
