Low fat cherry almond angel cake

Ingredients

  • 1 box angel food cake mix
  • 1 1/4 c cold water
  • 1 1/2 t almond extract
  • 1/2 c chopped maraschino cherries well drained
  • Glaze
  • 2 T melted butter or margarine
  • 2 c powdered sugar
  • 2 to 2 1/2 T maraschino cherry juice

Preparation

Step 1

Move rack to bottom position in oven and remove other racks
heat oven to 350
in extra large glass or metal bowl beat cake mix, water and extract on low for 30 seconds-carefully fold in cherries-pour into ungreased 10 inch angel food tube pan
Bake 37-47 mins or until top is dark brown and cracks are not sticky-do not underbake
turn pan upside down on glass bottle and cool for 2 hours then run a knife around edge and remove cake from pan
In medium bowl mix butter, powdered sugar and enough cherry juice for desired spreading consistency
Spread glaze over top of cake allowing some to drizzle down sides
Garnish with whole cherries if desired
