Ingredients

  • 2 T. margarine
  • 1/2 C. green pepper
  • 1/2 C. onion
  • 2 T. flour
  • 1 28 oz can stewed tomatoes
  • 1-2 t. lemon juice
  • 1 t. black pepper
  • 1 T. parsley
  • 6 oz uncooked shrimp

Preparation

Step 1

Melt margarine in pan, sauté green pepper and onion. Add flour to create a roux. Add tomatoes and lemon juice. Add shrimp, black pepper and parsley. Simmer long enough to cook shrimp being careful not to over cook it. Serve over rice.
