Baked Mashed Potatoes

Rich & delicate, this is a nice change from regular mashed potatoes and a good, quick side dish when you're expecting company.

Ingredients

  • 8 medium potatoes, peeled and cubed
  • 4 oz cream cheese, softened
  • 1/2 c. sour cream
  • 1/4 cup butter, divided
  • 1/3 cup chopped fresh chives
  • 1/2 tsp. salt
  • 1/4 tsp black pepper
  • 1/4 tsp. paprika

Step 1

1. Preheat oven to 400 degrees. Grease a 2 qt baking dish.

2. Place the potatoes in a medium pot with enough water to cover. Bring to a boil and boil until tender, 12-15 minutes. Drain, reserving 2 Tbsp. of cooking liquid.

3. Combine the potatoes, reserved liquid, cream cheese, sour cream, 3 Tbsp. butter, chives, salt and pepper in a large bowl. Beat until smooth and creamy. Do not over-beat

4. Spoon into the prepared baking dish. Dot with the remaining butter. Sprinkle with the Paprika. Bake for 10 minutes.


*Left over Magic: to make shepherds pie with the leftovers. Brown 1 lb. ground turkey or beef. Layer the meat, 1 cup frozen veggies, 2 cups leftover potatoes in a casserole dish. top with 1/4 cup shredded cheddar and bake for 20 min at 350 Degrees till cheese melts.

*Healthy hint: for calorie and fat control, use 1 cup fat free chicken or vegetable broth in place of cream cheese and sour cream.

*Freezer Friendly: The prepared mashed potatoes can be frozen in an airtight container or zip top bag for up to 10 months.
