Roast Duck Breast

Ingredients
- 4-8 ounce duck breasts (without skin)
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon ginger
- 2 cloves chopped garlic
- 1/4 teaspoon kosher salt
- 1/2 teaspoon cracked white pepper

Step 1
Combine olive oil, thyme, ginger, garlic, salt and pepper to make marinade.
Marinate duck for at least 4 hours (no more than 24) in the refrigerator.
Remove duck from refrigerator and let sit for 1 hour (to room temperature).
Preheat oven to 450 degrees.
Sear duck breasts in very hot pan until golden brown. "Hard sear"
Place the duck in hot oven for 5 minutes or until internal temperature is 130 degrees.
Remove the duck from the oven and let sit for 5 minutes before serving.
