Slow Cooker Beef Stew

  • 3 lbs. beef cubes (I like to use a london broil)
  • 5 large carrots, sliced into 1/2 inch thick pieces
  • 6 potatoes, quartered
  • 1 large onion, chopped
  • 3 cups of water
  • 1 can cream of mushroom soup
  • 2 evelopes of lipton onion soup mix
  • 2 tsps garlic powder
  • 2 tsps black pepper
  • 25 dumplings (see separate recipe)
  • 5 tbsps cornstarch



Step 1

Place vegetables in bottom of crock pot with 1 cup water and 1 envelope of lipton onion soup mix. Place beef on top, add 2 cups of water, spices, 1 evelope of onion soup mix and can of cream of mushroom soup. Cook 4-5 hours on low, or 8 hours on high, stirring occasionally the last 2 hours. When done, add cornstarch and water mixture to crock to thicken. Add dumplings, mix and serve.
