Ingredients

  • 1 tbsp. coconut oil
  • 1 medium organic onion, chopped
  • 2 organic garlic cloves, chopped
  • 3 cups organic GF vegetable or chicken broth
  • 2 organic sprigs of mint
  • 2 lbs. asparagus, break hard part off and cut in half
  • 1/2 cup chopped organic parsley
  • 1-cup coconut milk
  • 2 tbsp. fresh organic lime juice
  • Sea salt and organic GF black pepper to taste
  • 1/2 cup chopped organic chives

Preparation

Step 1

Add coconut oil into a medium pot and heat, add onions and sauté 5 minutes, then add garlic and sauté one more minute on low heat

Add broth and mint and simmer for 5 minutes, remove mint and add asparagus and parsley, cover cook for 5 minutes on low heat

Slightly cool and add to blender or food processor in small batches, blend until almost creamy but still leaving small pieces

Stir in coconut milk, lime juice, salt and pepper, serve with chopped chives, sometimes I add few pieces of thinly sliced asparagus heads as garnish
