Spinach Souffle-Phyllo Cups

Souffles have a reputation for being difficult, one these airy snacks easily dispel. Phyllo dough provides a quick-bake crust, while ready-made spinach souffle is enhanced with cayenne papper and feta cheese for a tasty filling.

Ingredients

  • 5 sheets phylo dough
  • Olive oil cooking spray
  • 1 T lemon juice
  • 1 pkg (12oz) spinach souffle
  • 1/4 t salt
  • 1/4 t cayenne pepper
  • 1 pkg (2oz) feta cheese, crumbled
  • cayenne pepper

Preparation

Step 1

1) Preheat onen to 350. Lay out 1 sheet of phyllo dough. Spray lightly with cooking spray. Top with another sheet of phyllo dough and spray with cooking spray. Repeat three times more. (Keep stack of phyllo dough covered with plastic wrap to prevent it from drying out)

2) Cut phyllo stack into six 6" squares. Fit each square into a cup of a standard muffine pan. Bake in preheated oven for 10 minutes.

3) Remove plastic cover from spinach souffle. Microwave on high for 4 minutes. Remove from microwave. Stir in lemon juice, slat and cayenne pepper. Return to microwave. Cook for 4 minutes more.

4) Divide spinach mixture among baked phyllo cups. Sprinkle feta cheese on top. Garnish each cup with a dash of cayenne pepper (optional). Bake for 6 minutes
