Ingredients
- 4 lbs large shrimp
- 1/4 cup salad oil
- 3 tbsp flour
- 1 large onion
- 1 can tomato paste
- 1 large green bell pepper
- 2 tsp salt, or to taste
- 2 tsp pepper
- 1 cup chicken broth

Step 1
Clean shrimp, chop onion and bell pepper. Make a roux by heating oil and mixing flour, constantly stirring until well browned. Add onions and let cook till onions are soft.Add shrimp, salt and pepper. Stir until shrimp are coated with roux. Add tomato paste and green peppers. Stir and cook 15 mins. over moderate heat. Pour in chicken broth and more salt and pepper if needed. Cook approx. one hour or until shrimp are tender and most of liquid boils out to a nice consistency. Serve over rice. Also good over grits.
