Cream Cheese-Coconut-Pecan Pound Cake

Ingredients

  • 1 1/2 c butter, softened
  • 1 pkg cream cheese, softened
  • 3 c sugar
  • 6 lg eggs
  • 3 c flour
  • 1/2 t salt
  • 1/4 c bourbon
  • 1 1/2 t vanilla extract
  • 1 c chopped pecans, toasted
  • 1/2 c shredded coconut

Preparation

Step 1

Beat butter & cream cheese until creamy. Gradually add sugar, until light & fluffy. Add eggs, 1 at a time, beating until yolk disappears. Sift together flour & salt; add to butter mixture alternately with bourbon. Beat at low speed until just blended. Stir in vanilla, pecans & coconut. Pour into greased & floured tube pan. Bake at 325 deg for 1 hr 35 mins. Cool on wire rack 10-15 mins.
