Ingredients

  • 7 lb Pork Shoulder (or pork butt).
  • Salt & Water
  • Pork Rub
  • 1 Onion
  • 2 tsp minced garlic
  • 1 cup chicken stock

Preparation

Step 1

Brine (or soak) the pork in salt water for 24 hours before cooking. The rule of thumb is 1/4 cup of salt for every 4 cups of water. After 24 hours, rinse the meat and pat it dry with paper towel.

Once dried, score the fatty part of the meat in a checkered pattern, about an inch apart and 1/4 inch in depth. Then apply a pork rub (we used McCormick Grill Mates Pork Rub). Apply as much as you'd like and rub well on all sides.

Pam your slow cooker and then add 1 onion (chopped) & 2 tsp of garlic. Add 1 cup of chicken stock. Finally, set your pork on top and cover with lid.

Cook on low for 8-10 hours. DO NOT OPEN THE LID! :) Remove meat and pull apart once the time is up. Strain the onions from the liquid and add back to slow cooker. Mix onions and pork together with BBQ sauce. Let it heat back up.
