Ingredients
- 1/4 cup grated Parmesan cheese
- 1 tsp.paprika
- 4 (6 oz) flounder, catfish or tilapia fillets
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup butter
- 2 T. fresh lemon juice

Step 1
Place 1 oven rack 5 inches from heat; place a second rack in middle of oven. Combine Parmesan and paprika. Season fish with salt & pepper.
Preheat oven to 450. Heat butter in broiler safe pan in oven 8 min. until starting to brown. Place fish in butter, skin sides up.
Bake at 450 on middle oven rack 10 min. Carefully flip fish and baste with pan juices.
Sprinkle with lemon juice and Parmesan mixture. Bake 5 more minutes until fish flakes. Remove fish from oven; increase temperature to broil.
Broil on upper rack 2-3 min until bubbly.
