Peanut Butter Marinated Chicken Thighs

Ingredients
- 4 chicken thighs
- 1 c peanut butter
- 1/4 c brown sugar
- 4 garlic cloves, minced
- zest and juice of 1 lime
- 1/2 t crushed red pepper flakes, or to taste
- 1/4 t pepper
- 1/4 c soy sauce
- 1/2 c water

Step 1
Pat thighs dry with a paper towel and score 3 times with a sharp knife or puncture 3 times with a fork. (This ensures flavor penetrates into the meat.) Place thighs in a plastic bag and set aside.
In a bowl whisk together remaining ingredients until smooth. Pour into the bag with the thighs and seal the bag. Massage the marinade into the meat. Refrigerate for a minimum of 30 mins or up to 24 hours.
When ready to cook, preheat oven to 350. Line a baking sheet with parchment paper. Remove the thighs from the bag and place on the parchment paper. Bake 30 mins for skinless, boneless thighs or 40 mins for bone-in thighs, or until meat thermometer reads 165.
