Fried Soft Shell Crabs

Ingredients

  • 1 sleeve saltine crackers, crushed
  • 1/3 freshly grated parmesan cheese
  • Salt and Pepper to taste
  • 2 tbsp dijon mustard
  • 2 eggs
  • all purpose flour for dredging
  • 6 soft shell crabs, rinsed and patted dry
  • Extra virgin olive oil for frying

Preparation

Step 1

1. Crushed saltines in a ziploc bag with a rolling pin or meat mallet(smooth side). After crushed, add parmesan cheese and salt and pepper to taste. Place Saltine mixture on large plate
2.Beat eggs with dijon mustard in bowl
3. Dredge Crabs in flour, shaking off excess flour. Dip crabs in egg mixture and then press both sides of crabs into saltine mixture.
4. Place crabs on wax paper on a large rimmed baking sheet and refrigerate for at least one hour to set saltine coating
5. Add enough Extra virgin olive oil for frying in a large non stick skillet.Heat oil over medium high heat. Fry soft shell carbs until golden and then flip gently to other side and fry until golden about 3-5 minutes per side
6. Place Crabs on a paper towel lined platter .
7. To serve- Remove crabs from paper towels and place on platter
