Crispy Oven Baked Potato Skins

Preparation
Step 1
Wash potatoes well, poke with a fork and microwave until cooked (approx 6 min for 2 potatoes or 8-10 min for 4 potatoes). If you prefer, you can bake them in the oven for 1 hour at 350 degrees.
Let potatoes slightly cool, cut in half lengthwise and scoop out the flesh leaving just a small bit in the shell. Reserve the flesh another use (I made Loaded Baked Potato Soup with these ones).
Cut the skins in 1/2 again (each potato will produce 4 skins). Lightly brush the skin side with olive oil (or spray with cooking spray). Broil about 4" from the heat for 5 minutes or until crispy.
Flip the skins over and top the flesh with cheddar cheese (approx 1 tablespoon per skin) and bacon bits. Broil until cheese is melted & bubbly.
Top with sour cream and green onions.
