Honeyed Sweet-Potato Mash

Ingredients

  • 2 lbs. sweet potatoes, peeled and cubed
  • 3/4 cup heavy cream
  • 2 Tbsp. butter
  • 1 clove garlic, peeled & chopped
  • 2 Tbsp. honey
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg

Preparation

Step 1

In saucepot, bring potatoes and enough salted water to cover a boil. Reduce heat; cook 20 minutes. Drain; return potatoes to saucepot.
In saucepan, cook heavy cream, butter and garlic for 2 minutes. Add to potatoes. Add remaining ingredients.
Using hand masher or potato ricer, mash potato mixture.
