Ingredients

  • 1 cedar plank
  • 1 small onions sliced
  • 4 rosemary sprigs
  • 4 thyme sprigs
  • 1 1/2 pounds salmon fillet
  • Olive oil for rubbing on salmon and plank
  • Salt for rubbing on salmon
  • 3 lemons sliced
  • Pepper for rubbing on salmon

Step 1

Soak plank in warm water for at least 20 minutes. Slice onions and lemons.

Heat grill on high.

Dry plank with paper towel. Rub olive oil on plank on top side. Rub olive oil on both sides of fish. Sprinkle salt and pepper on both sides of fish.

Lay onion slices on plank in area that fish will cover. Lay rosemary and thyme on onion slices. Place salmon on onions and herbs. Lay lemon slices in rows covering entire fish.

Place plank on grill and reduce heat to medium. Cook salmon for about 30-45 minutes depending upon how thick the salmon is and checking every ten minutes or so to make sure the flames have not flared up and burned the fish.

An alternative to the plank is to grill the salmon in tin foil. Place the onions, herb sprigs and lemon slices on the foil. Place fish on the lemon slices. Place more lemon slices on top of the entire fish. Place on grill and cook for 15-20minutes. Very moist and savory.
