Chicken Noodle Soup

Ingredients
- 2 2-pound chicken breasts boneless
- 2 13-ounce cans of chicken broth
- 1 large onion diced
- 2 large garlic cloves crushed
- 2 bay leaves
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 ribs celery sliced
- 2 cups small egg noodles
- 1/4 cup parsley snipped
- 1 1/4 cups sliced scallions

Step 1
Combine chicken, two quarts water, broth, onion, garlic, bay leaves, thyme, salt and pepper in large pot. Bring to boil over high heat. Reduce heat and simmer 30 minutes until chicken is cooked. Skim off foam. With slotted spoon, remove chicken and bay leaves. Add celery to pot.Simmer 15 minutes while chopping chicken into 3/4 inch pieces. Add noodles. Simmer ten minutes until noodles are tender. Add chicken. To serve: stir in scallions and parsley.
