Ingredients

  • 5 lb red skin potatoes, boiled, whole (20 lb)
  • 1 stick margerine (1 lb)
  • 2 sticks unsalted butter (2 lb)
  • 2 T fresh basil, chopped (1/2 c)
  • 1 1/4 oz blackening spice (5 oz)
  • 1 c half & half (1 qt)

Combine all ingredients adding half & half to consistency you want. Taste and adjust seasoning.
