Oatmeal Raisin Blueberry muffins
Ingredients
- Wet ingredients
- 1/4 butter or margarine, melted
- 1 cup milk
- 1 large egg
- 2/3 cup old fashioned oats
- Dry ingredients
- 1 and 1/3 cups of flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg
- Additions
- 1 cup fresh or frozen blueberries tossed with 1 tablespoon flour

Step 1
1. Preheat oven to 400 degrees.
2. Grease 12 muffin-pan cups.
3. Whisk wet ingredients together in medium bowl and let stand for 10 minutes.
4. Combine dry ingredients in a large bowl.
5. Stir wet ingredients into dry ingredients just until combined.
6. Fold in the additions.
7. Spoon batter evenly into prepared muffin cups, filling each about 3/4 full.
8. Bake at 400 degrees for 20 to 22 minutes, until toothpick inserted comes out clean.
9. Cool in pans for 5 minutes. Remove from pans and serve warm, or cool completely, wrap well and freeze up to 1 month. To reheat, loosely wrap each muffin in a paper towel and microwave on high 15 to 20 seconds.
