Apple German Pancake (Paleo/GF/SF)

Ingredients
- Pancake batter:
- 1 cup coconut milk (or 1 c hemp milk + 1 tbsp coconut oil, melted)
- 6 eggs
- Liquid vanilla stevia + 2 tsp maple syrup to desired sweetness
- 2 tsp vanilla extract
- 1/8 tsp salt
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 1/4 c coconut flour
- 1/2 tsp baking soda
- 2 tbsp cornstarch or tapioca flour
- Apple mixture:
- 1 tbsp coconut oil
- 2 tbsp maple syrup
- 2 tbsp honey
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 2 apples, chopped
- Spritz of lemon juice and zest
- Dash of salt
- Topping:
- Walnuts

Preparation
Step 1
Preheat oven and cast iron pan to 500 degrees x15 minutes
In a blender/VitaMix, add coconut milk, eggs, stevia, maple syrup, vanilla, salt, cinnamon, nutmeg. Blend.
Add: coconut flour, baking soda, cornstarch. Blend and set aside.
In a saute pan, melt coconut oil then add the rest of apple mixture ingredients
Simmer x2-3 minutes
Pull cast iron pan out of the oven and add 1 tbsp coconut oil
Add apple mixture then add batter
Bake x8-10 minutes
Sprinkle with walnuts and serve!
