Ingredients

  • 5 ciabatta buns (can use toasted hamburger buns also)
  • 12 oz skinless, boneless salmon fillets
  • 3 green onions
  • 1 egg
  • 1 tsp seafood seasoning (optional)
  • 3 oz smoked salmon (skinned and boned) or lox
  • 1 tbsp olive oil
  • 1/3 cup mayo
  • cucumber, green onions, and lemon

Step 1

1. in food processor, process one bun to coarse crumbs. Transfer crumbs to large bowl. Coarsely chop salmon fillets and green onions, the pulse to coarsely grind in processor. Add egg, 1/2 tsp seafood seasoning and 2/3 of the smoked salmon. Pulse to combine. Transfer to bowl with crumbs. Mix, then shape in four 3/2-inch diameter patties.
2. In 12 inch nonstick skillet heat oil over medium heat. Cook patties 5-6 mins per side, just until golden and cooked through. Meanwhile, toast buns and finely chop smoked salmon, mayo, and remaining seasoning. Spoon some sauce on bun bottoms. Top with patty, then slices of cucumber and onions. Serve with sauce and lemon wedges. makes 4 servings.
