Broiled Lemon Cajun Chicken

  • 8 chicken breast halves, skinned on boned
  • 1 1/2 cups of butter or margarine
  • 3 large cloves of garlic
  • 2 tablespoons of dried parsley
  • 3 tablespoons of cayenne pepper
  • 1/3 cup fresh lemon juice
  • 2 cups of white rice.



Step 1

Preheat the boiler. Trim the fat and tendons from the chicken, rinse, and pat dry. In a medium saucepan, melt 2 tablespoons of butter. Add the minced garlic and sauté for 1 minute. Add the remaining butter, parsely and 1 tablespoon of cayenne pepper. Simmer for 1 minute.

Spread 1 cup of butter mixture into a 9x13 baking pan. Arrange chicken breast in baking pan. Sprinkle evenly with 2 tablespoons of lemon juice 1 tablespoon of cayenne pepper. Cover chicken with remaining butter mix. Broil 6inches from flame for about 10 minutes. Turn chicken over and sprinkle with remaining lemon juice and cayenne pepper. Continue to broil for 10 minutes more or until the chicken is fully cooked.

Serve immediately over hot rice.
