- 1 (15 oz) can chickpeas, drained and rinsed, keep liquid
- 2 tablespoons tahini
- 2 tabpespoons fresh lemon juice
- 1/4 cup chickpeas liquid
- 1 tablespoon olive oil
- 1 clove garlic
- 1/2 teaspoon salt
- 4 cups packed baby spinach
Add the chickpeas, tahini, lemon juice, liquid, olive oil, garlic and salt in a food processor and puree until smooth.
Add the spinach, 1 cup at a time, and puree until smooth.
